Protein Cleavage

Breaking a peptide bond is done via hydrolysis. Water is used to break the bond. Water was produced when the bond was formed.

"lysis" means separation

Acid hydrolysis

Non specific - any peptide bond will break. Heat the up protein.

Protease enzymes will break bonds at specific sites. e.g. trypsin will break peptides on the carboxyl side of lysine or arginine.
